- vinification notes: 100y old vines from Côte du Py and the lieu-dit Le Douby. extended aging period in 228-liter oak barrels (= pièce (specifically a pièce bourguignonne), which is the standard barrel used in Burgundy, France. While a 225-liter barrel is a Bordeaux barrique)

- clear, pale (concentration), no gas, no sediment, purple, no staining (extraction), low tears (viscosity)
aroma
- clean
- has a natural funk. a bit of that balloon smell when you swirl vigorously
- not a big bouquet. bouquet not a lot of fruit mostly non fruit. have to smell gently to get the high tone fruit.
what is diff between reductive vs oxidative? reductive = minimize oxygen contact = preserve fruit and has a struck match smell. oxidative = develops nutty savory notes from more oxygen conact. heading in sherry direction, if overdone turns to vinegar
